I was talking with someone the other day who said I may be eligible for the GI Bill. Would this be the case since I've completed my branch training?

on the enlisted side, you can start digging into your GI Bill as soon as you swear in...I would think it is the same for the officer side

Negative. Enlisted soldiers must complete AIT to be eligible for the GIB. Officers must complete BOLC.
